Course Objective

To introduce fermented foods and teach their production.

Course Content

It involves the production processes of various products by utilizing the metabolic activities of microorganisms used in the food sector, traditional and modern fermentation techniques, the design and control of fermentation processes, and the selection and use of microbial cultures.

Explanations

There will be two quizzes, a midterm exam, and a final exam.

  1. Quizzes will take place during the last 20 minutes of the last class of the week and will cover the topics from the previous week.

  2. Exam weeks are announced in the schedule. The topics of the exams will be announced a reasonable time in advance. Make-up exams will be provided for exams missed due to valid excuses accepted according to IZU regulations.

  3. The final exam will cover all topics taught throughout the semester. The date, time, and location of the final exam will be announced by the Dean's Office.

Rules

1. Attendance: According to the regulations, a student who attends less than 30% of the total course hours will be marked as absent (DZ) and will fail the course.
2. Tardiness: It is expected that you not only attend class but also arrive on time. Note that three late arrivals will be counted as one full absence. Being late is defined as arriving after the first 10 minutes of the class once the instructor has taken attendance.
3. Seeking Help: Asking questions about the course during class or office hours and learning the material on time is important for your education. We encourage students to seek help when necessary.
4. Academic Integrity: All work contributing to your course grade is expected to be entirely your own effort. Cases of plagiarism, copying, or other unethical behavior will be subject to disciplinary investigation and penalties according to IZU regulations.
5. The assessments stated in this syllabus are fixed, and no additional make-up assessments will be provided for the purpose of grade improvement.
